Xavier Rousset

Xavier’s journey began in France, where he trained at renowned restaurants including the two Michelin-starred Le Laurent in Paris and Villa Belrose in St Tropez. After moving to the UK, he became Chief Sommelier at Hotel du Vin and, in 2002, won the UK Sommelier of the Year competition—becoming the youngest Master Sommelier in the world at the age of 23.

He went on to lead the wine team at the Michelin-starred Le Manoir aux Quat’Saisons under Raymond Blanc, before launching Texture in 2007. Within three years, the restaurant earned a Michelin Star and three AA Rosettes. In 2010, Xavier founded 28-50 Wine Workshop & Kitchen, expanding to Mayfair and Marylebone.

In 2016 Xavier Opened open Blandford Comptoir in Marylebone, Followed by Cabotte in the City, and  Comptoir Café & Wine in Mayfair and The Black Book Soho in 2018 and lastly Echezo in Ibiza in 2025.

Rob Weston

Rob Weston is a highly respected British chef with over 30 years of experience in some of the UK’s most acclaimed kitchens. He trained under culinary greats including Marco Pierre White and Michel Roux Jr, and spent over a decade as Head Chef at The Square, helping maintain its two Michelin stars. In 2013, he took the helm at La Trompette in Chiswick, where his leadership earned and retained a Michelin star for more than ten years. Known for his refined, ingredient-led cooking, Rob continues to champion British seasonal produce with precision, depth, and quiet excellence.
